Ingredients

  • 500g (4 cups) bread or all-purpose flour
  • 7g instant yeast
  • 60g + 1 tbsp sugar
  • 1 tsp salt
  • 60g melted butter or oil
  • 280–300ml warm water
  • 2 tbsp milk powder (optional)

Steps

  1. 1Bloom yeast with 1 tbsp sugar + ¼ cup warm water (8–10 min, until foamy).
  2. 2Mix flour, remaining sugar, salt, milk powder in a large bowl.
  3. 3Add yeast mixture, butter/oil, and warm water — mix into a rough dough.
  4. 4Knead 12–15 min until smooth and elastic (windowpane test).
  5. 5First rise: 1–1.5 hrs covered, until doubled
  6. 6Punch down, shape into a tight log.
  7. 7Place in greased, lidded loaf tin; second rise 45–60 min until tin is nearly full.
  8. 8Bake at 180°C (350°F), lid on, 30–35 min; remove lid last 5 min for color.
  9. 9Cool on a wire rack before slicing.
